There is nearly no bitterness in our umeshu, which is matured for a year and then aged in oak barrels for one additional year to produce this unique and outstanding product. Tonda No Mizu, the local, natural mineral water that we use for all of our umeshu, has earned the Monde Selection Grand Gold Medal every year since 2002.
