We took on the challenge of developing new possibilities in sake and brewed this sake with the hopes of it becoming a hero (Hideo is also read as eiyu, which means hero in Japanese).A junmai nigorizake genshu(no adding water after pressing) that has 11% alcohol content and is both sweet and refreshing, which makes it easy to drink even for those who do not drink sake regularly.The master brewer checks the level of acidity and sweetness from rice and then at ALC 11%, gently rough pressed Moromi to have and bottling straight to bottles to create well balanced acidity and freshness for this pure sake. Generally, brewers ferment sake around ALC 18% but the head brewer presses Moromi during fermentation to leave much sweetness of rice in this sake with low alcohol.
